We've spoken before about seeing your outdoor living spaces as an extension of your indoor aesthetic, and that remains true, especially when it comes to hosting. Put A Fresh Twist On a Classic Summer Recipe
From renowned chef Ludo Lefebvre comes a recipe we'll be making and enjoying all summer long—a Hawaiian lobster roll. Featuring a fruit salsa with hints of sweetness and heat and on buttery brioche, it is the perfect dish to enjoy any time of day and with a glass (or bottle) of French rosé.
Recipe: Hawaiian Lobster Roll
4 lobsters, 1 ¼ pound each
Fill a large pot with water and bring to boil. Once boiling, add the lobsters and cook for 7 minutes. Remove the tails from lobster and transfer them to ice water. Return the knuckles and the claws to the water and continue to cook for 7 more minutes before transferring to ice water. When the tails, knuckles, and claws are completely cool, carefully remove the meat from the shell, dice the meat and refrigerate.
1 cup Heinz ketchup
1 cup Kewpie mayonnaise
5 tablespoons sweet pickle relish, chopped thin
3 tablespoons Worcestershire sauce
3 teaspoons finely ground fresh black pepper
Kosher salt to taste
Mix all ingredients in a small bowl with a whisk and keep in the fridge.
½ cup diced pineapple
½ cup diced mango
½ cup diced papaya
1 cup diced celery stick
8 very thinly sliced green jalapenos
4 basil leaves
4 mint leaves
3 tablespoons cilantro leaves
2 tablespoons tarragon
2 tablespoons madras curry
2 lemon juice
In a mixing bowl, add all the diced fruits, celery, green jalapenos, curry, and lemon juice, and stir the ingredients. Keep refrigerated. In another mixing bowl, mix all the herbs together and keep refrigerated.
In a mixing bowl, mix the lobster meat with the special sauce, keep some special sauce for the sandwich, and season to taste with kosher salt, fresh ground white pepper. Keep it reserved in the fridge.
4 brioche buns, cut sandwich style
¼ cup salted butter
In a nonstick sautéed pan, melt the butter on medium heat, add the brioche bread, color each for 2 minutes or until just golden brown.
Place the toasted brioche on a paper towel.
Take the 4 bottom brioche slices, add the lobster meat, and then the fruit salsa, herbs, and top brioche.
Enjoy with a glass of French rosé wine.
