Brown Butter Waffles with Maple Cream

6 tablespoons unsalted butter
2 cups all purpose flour
1 tablespoon brown sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 cup yogurt*
1 cup milk* almond can be used
4 large eggs
1 orange
1 teaspoon vanilla extract

Heat up your waffle iron.

Start by browning the butter in a saucepan over medium heat. Leave the butter fairly undisturbed, taking it past melted and to a golden brown stage. You'll know it's done when it's a golden brown color and there are little flecks of black (those are the milk solids from the butter that have been carmelized.) Pour into a heatproof bowl and let cool.

In a medium bowl, stir together the flour, sugar, salt and baking soda.

In a large bowl, whisk together the yogurt and milk. Whisk in the eggs, one at a time. Zest the skin of the orange and squeeze in the juice of half of the orange (about 2 tablespoons). Add the vanilla extract. Mix in the browned butter.

Add the dry ingredients to the wet, in three batches - folding the mixture just until incorporated.

Spray your waffle iron with non-stick spray. Add the batter to your iron (the amount will change depending on the size your iron, do a test waffle to see what's best.) Be sure to spray your waffle iron with non-stick spray before each waffle.

For the Maple Cream: In a large, heavy bowl, add 1 quart of heavy whipping cream. Whisk vigorously until the cream forms soft peaks and will be able to dollop. Add 1 tablespoon of pure maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Taste and add more syrup if needed.

Easiest Citrus Salad

This salad is so easy it doesn't need a recipe. We simple sliced up an assortment of citrus (blood oranges, naval oranges, and grapefruit are all great), squeeze some lime juice over top, sprinkled with fresh mint (any soft herbs are good here), and topped with pomegrante seeds. That's it!
